Sweet n Sour Onions

Coat 12" nonstick skillet with cooking spray; heat over medium-high heat.
Add 1 lb. thinly sliced onions; cook until golden, (5-7 minutes.)
Stir in:
2/3 cup water
1/2 cup ketchup
1/4 cup barbecue sauce and
2 tbs. vinegar

Bring to bil, stirring occasionally. I cook mine down low 'til they're almost carmelized. Great with veggies or on burgers.
Enjoy.

BBQ Nachos

1 bag of tortilla chips – your choice
1 jar queso dip
1 lb. pulled pork (or chicken or turkey)
½ cup bbq sauce (we like Corky’s but anything you like will work)

Pour the chips into a large bowl.
Heat the queso dip in the jar and pour over the chips.
Put the BBQ pork over the cheese.
Drizzle Corky’s sauce over everything.

You can add jalapenos if you want something spicier. Also a few dollops of sour cream.
